Ingredients
1cupall-purpose flour
1cupcornmeal
⅔cupwhite sugar
1tbspbaking powder
½tbspsalt
⅓cupvegetable oil
1cupmilk
1egg
¼cuphoney
2tbspbutter
Honey Butter
1stickbutterroom temperature
1½tbsphoney
Instructions
Preheat the smoker to 400°F, and place the empty skillet in to heat up.
Combine the dry ingredients in a large bowl.
In another bowl, combine the wet ingredients.
Pour the wet ingredients into the dry ingredients. Stir until the batter is evenly mixed.
Throw a tablespoon of butter into the hot skillet let it melt then give it a swirl to coat the pan.
Carefully pour the cornbread mixture into the hot skillet. Close the lid and cook for 25 minutes. Check for doneness at this point. You’re looking for a golden brown top and to be able to stick a toothpick or fork in the center and it comes out clean. It can take anywhere from 25-45 minutes.
Once your cornbread is cooked, spread some of the honey butter over the top. Serve what is left on the side with the cornbread.
Honey Butter
Mix the softened butter with the honey. You want the honey and butter to be completely combined.
