Leftover BBQ Smoked Pulled Pork Tacos

A quick and easy taco that uses up some of that delicious smoked pulled pork you have stored away in your fridge or freezer

Ingredients

  • 2 cups leftover pulled pork
  • 1 tbsp olive oil
  • 4 tbsp BBQ Sauce
  • 2 tbsp water or enough to loosen the sauce to coat the pork
  • 12 Corn tortillas
  • 2 cups Southern style coleslaw
  • avocado optional
  • red onion optional
  • sliced jalapeno optional
  • sour cream optional
  • cilantro optional
  • hot sauce optional

Instructions

  • Heat a couple tablespoons of oil in pan over a medium/ high heat and then add your leftover pulled pork.
  • Once the pork has heated through, turn the heat off and add a good slug of BBQ sauce along with a few tablespoons of water. The residual heat in the pan will loosen and coat the pork with the sauce.
  • Assemble your tacos with the pulled pork and whatever else takes your fancy!
