Garlic and Rosemary Smoked Potatoes
Smoked baby potatoes seasoned with garlic, fresh rosemary and parmesan cheese - a classic side dish that goes well with just about any meal.

- 3 cups baby potatoes
- 2 tbsp rosemary roughly chopped
- 2 tbsp garlic chopped
- 2 tbsp olive oil
- ¼ cup parmesan cheese grated
Wash potatoes.
Place potatoes into a 10-12 inch cast iron skillet.
Drizzle olive oil over the potatoes making sure to coat everything evenly.
Season with salt, pepper, and add the chopped rosemary, garlic and parmesan cheese (reserving some for later).
Place cast iron skillet into your smoker at 300°F and smoke with a fruit wood for an hour and 15 minutes or until the potatoes are fork tender.
Remove potatoes from the smoker, stir and top with extra parmesan cheese and a little more salt if needed.
