Garlic and Rosemary Smoked Potatoes 

Smoked baby potatoes seasoned with garlic, fresh rosemary and parmesan cheese - a classic side dish that goes well with just about any meal.

Ingredients

  • 3 cups baby potatoes
  • 2 tbsp rosemary roughly chopped
  • 2 tbsp garlic chopped
  • 2 tbsp olive oil
  • ¼ cup parmesan cheese grated

Instructions

  • Wash potatoes.
  • Place potatoes into a 10-12 inch cast iron skillet.
  • Drizzle olive oil over the potatoes making sure to coat everything evenly.
  • Season with salt, pepper, and add the chopped rosemary, garlic and parmesan cheese (reserving some for later).
  • Place cast iron skillet into your smoker at 300°F and smoke with a fruit wood for an hour and 15 minutes or until the potatoes are fork tender.
  • Remove potatoes from the smoker, stir and top with extra parmesan cheese and a little more salt if needed.
