Smoked Cornish Game Hens

Smoked Cornish hens are a fast and flavorful option when you want something a little different. Crispy skin, juicy meat, and perfect for individual servings.

Ingredients

  • 2 cornish game hens 1 ½ - 2 lbs
  • 1 stick butter unsalted, room temperature
  • 3 tbsp smoked chicken rub or a store-bought poultry seasoning.

Instructions

  • Pat each hen dry with a paper towel.
  • Mix the butter and rub until well combined.
  • Pull the skin away from the breast meat using your finger, being careful not to tear it.
  • Put ½ tbsp butter on each side of breast meat in each bird.
  • Coat each bird with remaining butter.
  • Prepare smoker to 275°F.
  • Arrange hens on grates and close the smoker.
  • Smoked the hens for about an hour or until the internal temperature reaches 160°F at the thickest part of breast and thigh.
  • Remove from smoker, tent with foil and let rest at least 15 minutes.
  • Serve whole or carved.
