Bacon Wrapped Brussels Sprouts

Brussels sprouts wrapped in bacon with a sweet BBQ seasoning and maple glaze.

Ingredients

  • 16 oz Brussels sprouts
  • 1 pack thin cut bacon
  • 1 tbsp BBQ rub a sweet rub like our ultimate rib rub
  • ¼ cup maple syrup

Dipping Sauce

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 2 tbsp lemon juice
  • 1 tsp Kosher salt
  • ½ tbsp garlic powder
  • dash of cayenne
  • chives to garnish

Instructions

  • Heat your smoker to 225°F.
  • Wash and cut the ends off the sprouts.
  • Take half a slice of bacon and wrap it around a sprout, securing with a toothpick. Repeat with remaining sprouts.
  • Season the sprouts with BBQ rub.
  • Place on a rack and into the smoker. Smoke at 225°F for 30 minutes.
  • Raise the temperature to 375°F and smoke for a further 45 minutes or until the bacon is crispy.
  • Five minutes before removing the sprouts, brush with maple syrup.
  • For the dipping sauce, combine all the ingredients in a bowl and garnish with chives.

Notes

What's the best wood to use to smoke with? Nothing too strong, we used Bear Mountain cherry  pellets.
