Overview and first impressions

The Gozney Roccbox is a restaurant-grade, portable pizza oven that can be fueled by propane or wood (with the wood burner option purchased separately).

Reaching 950°F, it can cook a pizza very fast, while the safe touch silicone jacket surrounding the pizza oven is cool to the touch.

The safe touch system is unique to the Roccbox as the other ovens I tested were very hot.

The overall setup was very easy. Straight out of the box, the oven comes with a lifting strap which made pulling the oven out of the box quick and painless.

The Roccbox comes with a nice pizza peel which is always a much-welcomed accessory.

Weighing in at 44lbs, it is small and compact, and quite manageable to transport with its dual folding legs.

The built-in thermometer is a great bonus as this is not a feature of most ovens. I knew exactly when the oven was at the right temperature to start cooking.

For ovens that don’t have a built-in thermometer, using an infrared thermometer gun will give you an accurate reading.

The cooking space was a little tight, 12″, compared to the opening of most of the other ovens I’ve tested, but I was still able to get a decent size pizza inside.

External dimensions:16.3” x 21” x 18.6”
Cooking area dimensions: 12.4” x 13.4”
Maximum temperature: 950°F
Weight:44lbs
Fuel type: gas or wood (optional wood burning accessory)
Body/legs material: stainless steel
Cooking floor:cordierite stone

If you are looking to cook a larger pizza, you may want to consider a larger oven such as the Ooni Karu 16 which still allows the flexibility of multi-fuel options, but with a larger cooking area.

The start-up to preheat the oven took about 25 minutes, but once it was up to temp, it handled pizza after pizza with no problem.

The patented baffle plate technology sends the flames towards the opening of the oven, creating even heat distribution. I was pleasantly surprised at how quickly and evenly the pizzas cooked.

This oven is well-priced for the features it includes; a built-in thermometer, and a safe touch silicone jacket, while giving you the flexibility to use wood or gas as a fuel source. It does feel like a luxury oven at a very reasonable price.

What we like

  • Easy assembly took about 5 minutes.
  • Detachable burner system can switch between wood or gas.
  • Built-in thermometer – you can easily track the internal temperature of the oven.
  • Safe touch silicone jacket – keeps the outside nice and cool.

What we don’t like

  • Longer preheat time the oven takes 5-10 minutes longer than other ovens to preheat.
  • Small opening – with only a 12″ opening, you are limited in what you can cook.

Unboxing

Setting up the Gozney Roccbox is a fairly simple process. Simply remove the pizza oven from the packaging, along with the burner.

You lay the Roccbox on a flat, even surface with the cooking chamber facing downward. The legs are located on the bottom of the oven and unfold with ease.

Once the legs are extended, you just need to locate the bayonet fitting on the bottom of the oven and install the burner anticlockwise into the space.

The pizza oven must be placed on a solid, stable surface. Then you’re ready to start cooking!

Cooking with gas

The Gozney Roccbox comes standard with a gas burner that uses propane to ignite. The burner is engineered to replicate a wood flame without the hassle of wood and you can fire it up with the simple turn of a dial.

Before you start cooking pizza on the Roccbox, it’s important to season the grill for about 30 minutes to burn off any chemicals or particles left behind from the manufacturing process. This will ensure your pizza oven is fully grilled and safe to cook with.

There is a temperature gauge on the side of the oven that will allow you to monitor the temperature of your cook.

Wait until the temperature gauge reaches at least 300°F before you start cooking – this process will only take about 15 to 20 minutes.

The interchangeable wood burner

The Roccbox can also be a wood-burning pizza oven if you purchase the optional wood burner attachment.

Keep in mind that the unit is not compatible with other fuel sources such as coal or charcoal.

Woods to use

  • Ash
  • Oak
  • Beech
  • Fruit woods (e.g. apple, pear, cherry)

Woods to stay away from

  • Pine
  • Fir
  • Cedar
  • Redwood
  • Spruce
  • Painted or stained wood

Firing up the Roccbox with the wood burner attachment

You want to choose wood splits that are made of hardwood and chop them into lengths of around 5 inches and up to 1 inch thick.

Take a natural fire lighter and place it in the center of the Roccbox wood burner hopper and light it.

After the lighter has lit fully, you can push it down into the hopper shoot in the wood-burning chamber.

When you are ready to add wood, introduce 2 to 3 pieces of kindling at a time to start with, it’s important not to overfill the shoot. Once those pieces of wood are fully lit, you can add more wood as needed.

How do we rate the Gozney Roccbox?

The Roccbox has a sleek design and is extremely portable, making it a good option for both cooking at home and on the go.

It’s a smaller oven compared to others on the market, so you only have a 12” opening to work with – but for single-pizza cooks, this is a great oven at an attractive price.
